ODETTE

“ODETTE” is a cock­tail of life, family, and love. It reminds me of the sound of the gramo­phone in her old half-timbered house in the Normandy coun­tryside. All her grand­chil­dren huddle by the fireside, listen­ing to her adven­tur­ous tales. The famous scal­lops from the region are served in har­mony with her favor­ite soup, which, over time, has become ours as well.
A del­ic­ate blend of Jer­u­s­alem artichokes and celery, car­ried by the indul­gence of the cream from her cher­ished small producer.
For this 3rd edi­tion of Cal­vaClub, here is my trib­ute to Odette and her love for Normandy.

Ingredients

40 ml Calvados XO (Hors d’Âge)
30 ml Jer­u­s­alem artichoke puree
10 ml hazel­nut syrup
0,5 ml verjus
2 sprays celery bitters
Foamed milk infused with celery stalk
