POMMUM SICCUM

An ori­gin­al recipe by Mario Rus­sello (Edgar’s Fla­vors, Brussels). 

“Uzvar is a Ukrain­i­an spe­ci­al­ity which con­sists in smoking apples and pears, and dehyd­rat­ing them to make infu­sions. I have there­fore diver­ted this pre­par­a­tion to make an essence and a bitter. I also used a celery bitter to give the cock­tail a little veggie and Bel­gian kick. Celery is used to pre­pare “cari­coles” which is the typ­ic­al pre­par­a­tion of winkles in “Brus­seloise” style, a dish that will be in per­fect har­mony with the pro­posed cocktail.”

Ingredients

40 ml Calvados Dom­fron­tais VSOP
20 ml Pom­meau de Normandie
20 ml Blen­ded Scotch
3 dashes of homemade Uzvar bitter
3 dashes of celery bitter
Homemade Uzvar essence
