An original recipe by Mario Russello (Edgar’s Flavors, Brussels).
“Uzvar is a Ukrainian speciality which consists in smoking apples and pears, and dehydrating them to make infusions. I have therefore diverted this preparation to make an essence and a bitter. I also used a celery bitter to give the cocktail a little veggie and Belgian kick. Celery is used to prepare “caricoles” which is the typical preparation of winkles in “Brusseloise” style, a dish that will be in perfect harmony with the proposed cocktail.”
Ingredients
40 ml Calvados Domfrontais VSOP
20 ml Pommeau de Normandie
20 ml Blended Scotch
3 dashes of homemade Uzvar bitter
3 dashes of celery bitter
Homemade Uzvar essence
